Our journey through the landscapes of Grignan is coming to an end… Hey, would you like to know what happened next in Angèle’s story? In the land of lavender, vines, and truffles, she continued to tend to the family plots, season after season, year after year. What a satisfaction, during the cold winter days, to go truffle hunting with her dog! And what a pleasure to delight family and friends with local products! As there’s no omelet without breaking eggs, Angèle made it her specialty, and here are a few of her secrets…
In summer, her everyday omelet is enriched with onions and tomatoes sautéed in a pan before being mixed with eggs, shavings of picodon cheese, and fresh herbs (parsley and chives). Served cold, this omelet often fills the lunchbox during fieldwork. The festive omelet is enhanced with 50 grams of truffle cut into small pieces for 8 eggs and a pinch of thyme. Truffles and eggs are mixed in a bowl and left to rest for an hour before making the omelet, allowing the truffles to infuse perfectly. A real treat…
